Pan-seared Duck with Roasted Vegetables

Point Defense Duck (pan-seared duck with roasted vegetables)
Prep Time: ~30-45minutes
Cook Time: ~50 minutes
UNIT COMPOSITION
- Salt
- Pepper
- Olive Oil
- Dried Rosemary
- Red Wine
- 4 Duck Breasts (skin on)
- 1/2 lb of Red Potatoes
- 1/2 Cup of Brown Rice
- 1/2 Cup of Wild Rice
- 1/4 lb of Green Beans
- 1/4 lb of Baby Carrots
- 5 cloves of Garlic
- 1/4 lb of Cremini Mushrooms
- 2 Shallots
BUILD ORDER
OPENING--
- Combine your brown and wild rice. Wash thoroughly.
- Boil the rice with 2 cups of water
- Season the water.
- Rice should take about 10minutes or so to cook on a stove top.
MID GAME--
- Preheat your oven to 375°F
- Wash the potatoes thoroughly.
- Quarter the potatoes and place them in a glass baking dish.
- Season with salt, pepper and rosemary.
- Drizzle potatoes with olive oil.
- Cook potatoes for about 25minutes or until golden brown.
- Wash green beans and baby carrots. Cut green beans in half.
- Steam carrots and baby carrots (you can use the microwave or stove-top method.. for details on both methods, please see the mid-game strategy for the "250mm Steak Cannons" build)
LATE GAME--
- Place a pan on high heat. Add about a teaspoon's worth of olive oil.
- Dice your shallots, garlic and mushrooms.
- Sautee your shallots, garlic and mushrooms. Season with salt and pepper.
- Remove shallots, garlic and mushrooms and set aside.
- Add oil back into the pan.
- Begin to prepare your duck! Rinse the duck and pat dry with paper towels.
- Score the duck skin (this means cutting hash marks with a knife on the skin).
- Place the duck in the hot pan. Sear each side for about 1 1/2 minutes.
- Reduce the heat to medium-high and cook each side for 3 minutes. Duck will ooze out fat.
- Remove duck and let rest on a plate.
- Drain 95% of the fat from the pan.
- Deglaze the pan with red wine. (Deglazing means using a liquid, usually wine or broth, to remove the fatty bits called the "fond". This allows you to create a sauce using duck flavors and the wine).
- Let your red wine reduce in the pan (this means the sauce will thicken since most of the water from the wine is evaporating)
- Plate your veggies, rice and duck.
- Spoon sauce over the duck. Place the mushroom, shallots and garlic on top of the duck.
