Point Defense Duck

Pan-seared Duck with Roasted Vegetables

Ruin your opponent's day with the crafty Raven. Stalkers shooting down your banshees? No problem! Marauders hitting your tanks? No problem!

Just drop a Point Defense Duck and all your worries are gone*!

Point Defense Duck (pan-seared duck with roasted vegetables)
Prep Time: ~30-45minutes
Cook Time: ~50 minutes

UNIT COMPOSITION
  1. Salt
  2. Pepper
  3. Olive Oil
  4. Dried Rosemary
  5. Red Wine
  6. 4 Duck Breasts (skin on)
  7. 1/2 lb of Red Potatoes
  8. 1/2 Cup of Brown Rice
  9. 1/2 Cup of Wild Rice
  10. 1/4 lb of Green Beans
  11. 1/4 lb of Baby Carrots
  12. 5 cloves of Garlic
  13. 1/4 lb of Cremini Mushrooms
  14. 2 Shallots
BUILD ORDER

OPENING--
  1. Combine your brown and wild rice. Wash thoroughly.
  2. Boil the rice with 2 cups of water
  3. Season the water.
  4. Rice should take about 10minutes or so to cook on a stove top.
MID GAME--
  1. Preheat your oven to 375°F
  2. Wash the potatoes thoroughly.
  3. Quarter the potatoes and place them in a glass baking dish.
  4. Season with salt, pepper and rosemary.
  5. Drizzle potatoes with olive oil.
  6. Cook potatoes for about 25minutes or until golden brown.
  7. Wash green beans and baby carrots. Cut green beans in half.
  8. Steam carrots and baby carrots (you can use the microwave or stove-top method.. for details on both methods, please see the mid-game strategy for the "250mm Steak Cannons" build)
LATE GAME--
  1. Place a pan on high heat. Add about a teaspoon's worth of olive oil.
  2. Dice your shallots, garlic and mushrooms.
  3. Sautee your shallots, garlic and mushrooms. Season with salt and pepper.
  4. Remove shallots, garlic and mushrooms and set aside.
  5. Add oil back into the pan.
  6. Begin to prepare your duck! Rinse the duck and pat dry with paper towels.
  7. Score the duck skin (this means cutting hash marks with a knife on the skin).
  8. Place the duck in the hot pan. Sear each side for about 1 1/2 minutes.
  9. Reduce the heat to medium-high and cook each side for 3 minutes. Duck will ooze out fat.
  10. Remove duck and let rest on a plate.
  11. Drain 95% of the fat from the pan.
  12. Deglaze the pan with red wine. (Deglazing means using a liquid, usually wine or broth, to remove the fatty bits called the "fond". This allows you to create a sauce using duck flavors and the wine).
  13. Let your red wine reduce in the pan (this means the sauce will thicken since most of the water from the wine is evaporating)
  14. Plate your veggies, rice and duck.
  15. Spoon sauce over the duck. Place the mushroom, shallots and garlic on top of the duck.
